This one-pot meal, ready in 30 minutes, is sure to become your go-to meal on busy weeknights!
Ingredients
- 1 pound your favorite smoked sausage, sliced
- 8 oz small dry bowtie pasta (about 3 cups)
- 1 onion, diced
- 1 heaping tbsp garlic, minced
- 2 cups chicken broth
- ½ cup heavy cream or whipping cream
- 1 1 can (10 oz) diced tomatoes with Italian spices
- ½ tsp salt and pepper
- ½ tsp Italian seasoning
- ½ cup cheddar cheese
- ½ cup Monterey Jack with jalapenos
- ¼ cup green onions chopped (optional)
Instructions
- Heat up 1 tbsp of oil in a large pot or skillet. (You need something you can cover with a lid)
- Add your chopped onion, season with salt and pepper, and stir in your sausages. Cook until sausages are lightly browned.
- Add garlic and cook for another 30 seconds until it becomes fragrant.
- Add chicken broth, cream, tomatoes, and seasonings and mix well. Add pasta and push it down so that it's completely immersed inside the broth. Bring to a boil, cover, and reduce the heat to low. Let simmer for 15 minutes until pasta is cooked.
- In the meantime mix together the cheddar cheese and the Monterey jack cheese. (You can use any cheese blend that you prefer).
- Once the pasta is cooked, remove the lid, turn off the heat, and mix in 1/2 cup of the cheese mixture. Sprinkle the rest of the cheese on top, put the lid back on, and let stand 5-6 minutes until completely melted.
- Add chopped green onions on top and serve!
