One Pot Cheesy Sausage Bowtie Pasta

Ingredients
  

  • 1 pound your favorite smoked sausage, sliced
  • 8 oz small dry bowtie pasta (about 3 cups)
  • 1 onion, diced
  • 1 heaping tbsp garlic, minced
  • 2 cups chicken broth
  • ½ cup heavy cream or whipping cream
  • 1 1 can (10 oz) diced tomatoes with Italian spices
  • ½ tsp salt and pepper
  • ½ tsp Italian seasoning
  • ½ cup cheddar cheese
  • ½ cup Monterey Jack with jalapenos
  • ¼ cup green onions chopped (optional)

Instructions
 

  • Heat up 1 tbsp of oil in a large pot or skillet. (You need something you can cover with a lid)
  • Add your chopped onion, season with salt and pepper, and stir in your sausages. Cook until sausages are lightly browned.
  • Add garlic and cook for another 30 seconds until it becomes fragrant.
  • Add chicken broth, cream, tomatoes, and seasonings and mix well. Add pasta and push it down so that it's completely immersed inside the broth. Bring to a boil, cover, and reduce the heat to low. Let simmer for 15 minutes until pasta is cooked.
  • In the meantime mix together the cheddar cheese and the Monterey jack cheese. (You can use any cheese blend that you prefer).
  • Once the pasta is cooked, remove the lid, turn off the heat, and mix in 1/2 cup of the cheese mixture. Sprinkle the rest of the cheese on top, put the lid back on, and let stand 5-6 minutes until completely melted.
  • Add chopped green onions on top and serve!
