Sausage, spinach and tortellini soup
This fantastic warm and cozy soup is filling, budget-friendly, and bursting with flavors. It's perfect for lunch and/or dinner and makes great leftovers.
Ingredients
- 1 tbsp oil
- 1 lb ground Italian Sausage or 4 sausage links with casings removed,
- 250g cheese tortellini
- 1 large onion, chopped
- 2 cups carrots, diced
- 1 cup celery, thinly sliced
- 3 cloves garlic, minced
- 2 cups baby spinach (or more to taste)
- 1 796ml can of whole tomatoes, mashed with a fork or potato masher
- 8 cups chicken broth, low sodium
- ½ tbsp dry basil
- 1 tsp dry oregano
- 1 tsp thyme
- ¼ tsp salt
- ½ tsp black pepper
- ¾ tsp onion powder
- ¾ tsp garlic powder
Instructions
- Heat up the oil in a large pot over medium-high heat. Add ground sausage, break it apart, and season with salt and pepper to taste. Also, add the onion powder and garlic powder. Cook until browned and cooked through, then scoop it out and set it aside. You want to keep at least 2 tbsp of grease inside your pot. Remove any excess or add some oil if there isn't enough left.
- In the same pot, add your onions, carrots, and celery. Cook until the onions are translucent.Add garlic and cook for an additional 30-35 seconds.
- Next, add the mashed tomatoes (with all of the juices from the can), chicken broth, cooked sausage, basil, oregano, thyme, salt, and pepper. Mix well.Bring to a boil, cover, and let simmer for 10 minutes.
- Remove the lid, bring to a rolling boil, add tortellini, and continue to cook over medium-high heat until they are tender or cooked to your liking.
- Turn off the heat, add spinach, and stir until wilted. Give the soup a taste test and add more salt and pepper if needed.Serve and Enjoy!
