Slow Cooker Sausage and Cheese Tortellini
Ingredients
- 1 lb ground Italian sausage
- ½ small onion, diced
- 1 tsp garlic, minced
- 2-3 cups baby spinach
- 1 can (28oz) diced tomatoes
- 2 ½ cups chicken broth
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp pepper
- ¼ cup parmesan cheese
- 1 cup mozzarella cheese
- 1 block (8oz) cream cheese, softened
- 1 bag (20 oz) frozen cheese tortellini
Instructions
- In a preheated skillet, add and break apart the ground sausage. Add onions and cook over medium-high heat until sausage is browned and the onions are translucent.
- Add garlic and cook for another 30 seconds.
- Place the frozen tortellini inside of a large greased slow cooker (7 quarts). Spread the cooked sausage over the tortellini.
- Add spinach, diced tomatoes with juices, parmesan cheese, Italian seasoning, salt, and pepper. Stir everything until well combined.
- Cut the cream cheese into cubes and add it on top. Close the lid and cook on LOW for 3-4 hours (cooking time depends on your slow cooker).Quickly stir at 1 1/2 hours, and again at 3 hours to make sure it doesn't stick. Once it's done cooking, remove the lid and sprinkle the mozzarella cheese on top. Let sit for 15-20 minutes, before serving, to give the sauce some time to thicken up.Enjoy!
