Lemon Chicken Pasta

This easy lemon chicken pasta is bursting with delicious flavors and is the perfect weeknight dinner.

Ingredients
  

  • 1 tbsp oil
  • 2 tbsp butter
  • 12 oz Rotini Pasta (about 3½ cups)
  • 2-3 boneless skinless chicken breasts, cut into bite-size pieces
  • 1 medium onion, finely chopped
  • 3 large cloves of garlic, minced
  • 1 cup chicken broth
  • ¾ cup heavy/whipping cream
  • ¼ cup pasta water
  • zest and juice of 1 lemon
  • 2 cups spinach
  • ¾ cup parmesan cheese, shredded (more for garnish)
  • 2 tbsp flour
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp Italian seasonings
  • salt and pepper to taste

Instructions
 

  • Add pasta to a large pot of salted water and cook according to packaged directions.
    Once cooked, drain the water but keep some of the pasta water for later.
  • While the pasta is cooking, heat the oil in a large skillet over medium-high heat.
    Add the chicken and season with salt, pepper, onion powder, and garlic powder to taste. Cook until the chicken is golden brown and cooked through.
    Remove the chicken from the pan and set it aside.
  • In the same skillet, add the butter. Once the butter is melted add the onions and season them with a little bit of salt and pepper.
    Cook until they become translucent (about 3-4 minutes).
  • Add the garlic and cook for an additional 30-35 seconds until fragrant.
  • Add the flour and cook for about a minute to remove the raw flour taste. Make sure to stir constantly so it doesn't burn.
  • Slowly add the chicken broth while stirring and scraping the bottom of the pan.
    Add your cooked chicken, heavy cream, lemon zest, Italian seasonings, and paprika. Stir to combine.
  • Bring to a simmer, reduce the heat and allow to simmer for 4-5 minutes to allow the sauce to thicken.
    Add the parmesan cheese, and stir until completely melted.
  • Add the lemon juice and simmer for another minute. Give it a taste and add more, lemon juice or salt and pepper if needed.
  • Turn off the heat, add the spinach, and stir until wilted.
    Add the cooked pasta and mix until fully coated with the sauce. Add some pasta water, a little bit at a time, until you have the desired consistency. The pasta water also helps the sauce adhere better to the pasta.
  • Garnish with parsley and lemon slices if desired.
    Serve and enjoy!
