One-Pan Sloppy Joe Casserole

Ingredients
  

  • 1 lb Rotini Pasta
  • 1 lb ground beef
  • 3 cups chicken broth, low sodium
  • 1 small onion, chopped
  • ½ bell pepper, chopped
  • ½ tbsp fresh garlic, minced
  • ¾ cup cheddar cheese, shredded

Sauce Ingredients

  • 1 cup tomato sauce
  • ½ cup ketchup
  • 2 tsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • ¾ tsp chili powder
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Add the ground beef, onions, and bell peppers to a large skillet and season with salt and pepper to taste. Cook over medium-high heat until the ground beef is cooked and the onions are translucent. Remove excess grease if needed.
  • Add garlic and cook for another 30-35 seconds, stirring constantly so that it doesn't burn.
  • While the ground beef is cooking, grab a bowl and mix together until well combined, all the sauce ingredients.
  • Pour the sauce over the cooked ground beef, stir to combine, and let cook on medium heat for 2-3 minutes to allow flavors to blend.
  • Add chicken broth, bring to a boil and stir in the pasta. Turn the heat to medium-low, cover, and let cook for 15-20 minutes or until the pasta is cooked to your liking. Stir occasionally to make sure there is still enough liquid since some stovetops heat more than others.
  • Once pasta is cooked, remove the lid, add grated cheese, and stir until completely melted. Allow to sit for 2-3 minutes before serving.
