Why should you make this 15-minute one-pan Tuscan chicken gnocchi?
As a stay-at-home mom of 3 young boys, I know what it’s like to struggle to get everything done in a timely manner. Having to do homework, and rush out the door for soccer practice or a swimming class. Where do you find time to cook dinner? Sometimes it’s easier to just get takeout or throw those same old boring chicken nuggets in the oven.
That’s why I love this recipe! Even on the busiest days, you can still have a delicious home-cooked meal on the table for your loved ones in just 15 minutes! Also, everything is cooked in one pan so you don’t have to spend too much time doing dishes. One pan means easy cleanup! It doesn’t get any easier than that.
This fantastic one-pan meal taste like it came from a restaurant, but it’s super simple to make, and right from the comfort of your own home!

15 Minute One-Pan Tuscan Chicken and Gnocchi
Ingredients
- 2 tbsp unsalted butter
- 1 pound refrigerated gnocchi
- 1 rotisserie chicken, shredded
- 1 cup heavy/whipping cream
- ½ cup low sodium chicken broth
- ¾ tsp lemon juice
- 2 tbsp cream cheese
- ¾ parmesan cheese, grated
- 2 cups baby spinach
- 2 big cloves garlic, minced
- 1 small onion, chopped
- ¼ cup sundried tomatoes packed in oil, drained, and chopped. (save 1 tsp of the oil)
- 255 grams cherry tomatoes (about 1 cup)
- ½ tsp old fashioned dijon mustard
- 2 tsp Italian seasonings
- ½ tsp dried basil
- ¼ tsp red pepper flakes
- salt and pepper to taste
Instructions
- Melt the butter in a large skillet, over medium-high heat.Add the lemon juice, tomatoes, onions, basil, and salt and pepper to taste.
- Saute the tomatoes and onions, stirring often, until the tomatoes start releasing their juices and the onions are translucent. (about 4-5 minutes)
- Add garlic and cook an additional 30-35 seconds.Add sundried tomatoes and cook for another minute.
- Add chicken broth, cream, Italian seasonings, red pepper flakes, and dijon mustard. Stir and bring to a simmer. Let simmer for 2-3 minutes.
- Bring to a boil, add the gnocchi, cover, and cook over medium-low heat for 4-5 minutes until the gnocchi is fluffy and tender. Stir it once halfway through.
- Uncover, add cream cheese and parmesan and stir until melted and the sauce thickens.Add the shredded chicken and the spinach and cook until the spinach is wilted and that it's heated through.
- Turn off the heat and allow to sit for 2-3 minutes before serving.Enjoy!
