Sheet Pan Pierogi Quesadillas
Ingredients
- 8 large flour tortillas
- 1 ½ cup cooked ham, chopped
- 3 cups leftover mashed potatoes
- 1 ½ cup shredded cheddar cheese
- 1 ½ cup shredded mozzarella cheese
Instructions
- Preheat the oven to 425°F. Spray an 18×13-inch sheet pan with cooking spray.
- Arrange 6 flour tortillas, around the edges of the pan, overlapping each other slightly, with half of the tortillas hanging over the edge of the pan. There should be a gap left in the center. Place another tortilla in the bottom center to cover the gap.
- Sprinkle the cheddar cheese over the tortillas and spread the mashed potatoes, evenly on top.Add the ham over the potatoes and sprinkle the mozzarella on top.
- Place the final tortilla in the center, on top of the mixture, and gently fold the tortillas towards the center of the pan so that the mixture is completely covered with the tortillas.
- Grab a second sheet pan and spray the bottom with cooking spray. Place the second sheet pan on top of the tortilla and press down gently so that it holds into place.Place in the oven and bake for 20 minutes.
- Remove the top sheet pan and place the quesadilla under the broiler, for about a minute, or until the top is golden brown.Allow the quesadilla to cool a bit before cutting it into squares. Serve with sour cream, chives or green onions if desired.Serve and Enjoy!
