The BEST Ham, Bean and Tortellini Soup
Ingredients
- 1 tbsp Oil
- 2 tbsp butter
- 4 cups Refrigerated Cheese Tortellini
- 1 can Cannellini Beans/White Beans, drained and rinsed
- 2 cups cooked ham, cubed
- ½ cup celery, chopped
- 1 cup carrots, chopped
- 1 onion, chopped
- 1 tbsp minced garlic, 3-4 large cloves
- 5 cups low sodium chicken broth
- 2 cups half and half/cereal cream
- 2 tsp chicken bouillon powder
- ½ tsp black pepper
- ¾ tsp salt
- 1 tbsp Italian Seasonings
- 1 ½ tbsp dijon mustard
- ¼ tsp red pepper flakes (optional)
- ¼ cup flour
- 2 cups baby spinach, or more if desired
Instructions
- Heat oil in a large pot, over medium-high heat. Add ham and pan fry until they start to brown to release more flavor. Scoop out and set aside.
- In the same pot melt 2 tbsp of butter. Add onions, celery, and carrots and saute with a little bit of salt and pepper to taste, until the onions are translucent. This should take about 4-5 minutes.
- Add garlic and saute for another additional 30-35 seconds, until fragrant.
- Sprinkle flour and cook for a minute longer, stirring constantly.
- Gradually stir in chicken broth, making sure to scrape the bottom of the pot. Add in bouillon powder, ham, beans, dijon mustard, and seasonings. Stir to combine.
- Bring to a boil, cover, reduce the heat to low, and let simmer for 20 minutes.
- Add tortellini and continue to cook, uncovered, until al dente or cooked to your liking.
- Stir in half and half and let it heat through. Turn off the heat and add spinach. Stir until the spinach is wiltedServe and Enjoy!
