This easy one-pan recipe is a healthy meatless dinner made with simple and real ingredients. Perfect for any night of the week!

I do use chicken broth in this recipe because that is what I prefer but feel free to use vegetable broth instead to make it vegan!

Ingredients
  

  • 1 tbsp butter
  • 1 tbsp avocado oil
  • 1 can cannellini beans (or Great Northern), rinsed and drained
  • 1 tbsp fresh garlic, minced
  • 9 oz fusilli pasta (250g), about 2 1/2 cups
  • cup low sodium chicken broth
  • 1 pint cheery tomatoes (340g)
  • cups baby spinach
  • ¾ cup parmesan cheese, grated (more for serving if desired)
  • ½ tsp paprika
  • ¼ tsp dry thyme
  • ½ tsp dry basil
  • 1 tsp onion powder
  • tsp red pepper flakes
  • ½ tsp black pepper, divided (more to taste)
  • 1 tsp salt, divided (more or less to taste)

Instructions
 

  • In a large skillet, heat oil and melt butter over medium-high heat.
  • Add tomatoes, onion powder, basil, ½ tsp of salt, and ¼ tsp black pepper.
    Saute the tomatoes, stirring often so that the basil doesn't burn, until they release their juices and the skin bursts easily.
  • Once the tomatoes start to break down, add the garlic and cook, stirring constantly, for an additional 30-35 seconds.
    Add spinach and stir until it is almost wilted.
  • Add drained beans, paprika, red pepper flakes, ½ tsp salt, ¼ tsp black pepper, and thyme.
    Add chicken broth, stir and bring to a boil.
  • Stir in pasta, cover, and reduce the heat to medium-low and allow to cook for 15-20 minutes or until pasta is cooked to your liking.
  • Stir in the parmesan cheese and once melted have a taste test and adjust seasonings if needed.
    Turn off the heat and allow to sit for 5 minutes before serving.
  • Serve with extra parmesan cheese sprinkled on top if desired.
