Oven-Baked Creamy Chicken Fajitas
These oven-baked fajitas are deliciously creamy and so easy to make that they are bound to become a family favorite!
Ingredients
- 4 chicken breasts, cut into strips
- 1 bell pepper, sliced
- 1 small onion, sliced
- 1 package Fajita seasonings
- 1 bloc of cream cheese (250g)
- ½ cup sour cream
- 1 can Rotel with chiles, drained (283g)
- 1 cup Mexican cheese, grated (more or less to taste)
- 1 package flour Tortillas, medium-sized
- salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- In a hot skillet, melt cream cheese and then mix it together with the sour cream and the drained Rotel.
- Spray a baking dish with cooking sprayAdd chicken strips to a baking dish and season with salt and pepper to taste and add vegetables on top. Then sprinkle the fajitas seasoning on top.
- Pour the cream cheese mixture on top and spread as evenly as possible.Bake in the oven for 30-35 minutes. ( Cooking time depends on the thickness of your chicken and your oven so be sure to check up on it).
- Remove chicken from the oven and sprinkle mexican cheese on top.Place it back in the oven until the cheese is completely melted and bubbly (5-7 minutes).
- Serve over tortillas and with your favorite toppings!Enjoy!
