Oven-Baked Creamy Chicken Fajitas

These oven-baked fajitas are deliciously creamy and so easy to make that they are bound to become a family favorite!

Ingredients
  

  • 4 chicken breasts, cut into strips
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 package Fajita seasonings
  • 1 bloc of cream cheese (250g)
  • ½ cup sour cream
  • 1 can Rotel with chiles, drained (283g)
  • 1 cup Mexican cheese, grated (more or less to taste)
  • 1 package flour Tortillas, medium-sized
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F.
  • In a hot skillet, melt cream cheese and then mix it together with the sour cream and the drained Rotel.
  • Spray a baking dish with cooking spray
    Add chicken strips to a baking dish and season with salt and pepper to taste and add vegetables on top. Then sprinkle the fajitas seasoning on top.
  • Pour the cream cheese mixture on top and spread as evenly as possible.
    Bake in the oven for 30-35 minutes. ( Cooking time depends on the thickness of your chicken and your oven so be sure to check up on it).
  • Remove chicken from the oven and sprinkle mexican cheese on top.
    Place it back in the oven until the cheese is completely melted and bubbly (5-7 minutes).
  • Serve over tortillas and with your favorite toppings!
