Who doesn’t love a good thanksgiving dinner? I know I do, and so does my family. But turkeys are expensive and way too big to make all the time. Am I right?

This is why this recipe is perfect! Sure, it’s not exactly the same as your traditional thanksgiving meal but it definitely hits the spot and is a great alternative when you want to make something easy that everyone in your household will eat up. That is a HUGE win in my book!

This Cheater Thanksgiving Dinner is perfect for busy weeknights or for busy parents looking to quickly get an easy but satisfying meal to the dinner table.

Ingredients
  

  • 12 thick turkey meat deli slices

Stuffing

  • 2 tbsp butter
  • 1 box stove top stuffing mix (chicken or turkey)
  • 1 cup chicken broth
  • 1 onion, chopped

Gravy

  • ¼ cup unsalted butter
  • ½ tbsp chicken bouillon powder
  • ¼ cup flour
  • ¾ tsp soy sauce, low sodium
  • 2 cups chicken broth, low sodium
  • ¼ tsp sage
  • ¼ tsp thyme
  • 1 tsp onion powder
  • ¾ tsp garlic powder
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F.

Stuffing

  • Melt butter in a skillet over medium-high heat. Add onions, season with a little salt and pepper to taste, and cook until translucent (5-6 minutes).
  • Add chicken broth, if using a different stuffing mix brand (other than stove top), make sure to check the instructions for the quantity of liquid to use.
    Bring to a boil and stir in the stuffing mix. Cover, turn the heat off, and set aside for at least 5 minutes.

Gravy

  • In a medium-sized saucepan, melt the butter over medium-high heat.
    Add flour and seasonings, except for the salt and pepper, and for about a minute, stirring constantly to prevent the flour from burning.
  • Slowly whisk in the broth and then add the chicken bouillon powder and the soy sauce.
    Stir to combine and bring to a boil.
  • Reduce to a simmer and cook, whisking constantly, until the gravy becomes smooth and thick.
    Give it a taste test and add salt and pepper to taste if needed.
    Note that the longer the gravy cooks, the more concentrated the flavors will be.

Assembling

  • Scoop some of the stuffing mixtures into the deli slices, roll them up, and place them seam-side down in a baking dish. Keep going until your baking dish is full.
  • Sprinkle some black pepper, if desired over the turkey slices and pour gravy on top.
    Bake in the oven for 20 minutes.
  • Serve this with your favorite sides, such as mashed potatoes, vegetables, deviled eggs, or whatever you like.
