Slow Cooker Sloppy Joe Casserole

This slow cooker casserole is perfect for a tasty weeknight dinner. It’s SO easy, made with pantry ingredients, budget-friendly, and a totally comforting meal.

It is made with an easy homemade sloppy joe mixture and slow-cooked with tater tots and gooey melty cheese!

Slow Cooker Sloppy Joe Casserole

Ingredients
  

  • 1 lbs ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bag of frozen tater tots (750g)
  • ¾ cup cheddar cheese, shredded (or more to taste)

Sauce Ingredients

  • 1 cup tomato sauce
  • 1 tbsp Worcestershire Sauce
  • ½ cup bbq sauce
  • ¼ cup ketchup
  • 1 tsp yellow mustard
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp both salt and pepper

Instructions
 

  • Add ground beef and chopped onions to a large skillet. Season with salt and pepper to taste and cook all the way through.
    Remove excess grease if needed.
  • Add minced garlic and allow to cook for an additional 30 seconds, until fragrant.
  • In a bowl add all of the sauce ingredients and mix together until well combined.
  • Pour the sauce over the cooked ground beef and mix well.
  • Add a layer of frozen tater tots on the bottom of your slow cooker and pour the sloppy joe mixture on top. Spread it as evenly as possible.
    Pour the remaining tater tots on top.
  • Cover and cook on low for 3-5hrs. Cooking time varies, depending on your slow cooker.
    In the last 30 minutes of cook time, uncover, and sprinkle some cheddar cheese all over the top. Cover and continue cooking until cooked through.
    Serve with sour cream and fresh parsley if desired.
