Ingredients
- 4 boneless, skinless chicken breasts
- 1 jar of your favorite salsa (350 ml or 15 ounces)
- 1 packet taco seasonings
- 1 ½ cups chredded cheddar cheese
- sour cream and chives for toppings (optional)
Instructions
- Preheat oven to 375 degrees.
- Spread 1/2 cup of salsa in the bottom of a 7×11 baking dish and spread evenly. Add the chicken on top.
- Sprinkle the taco seasoning all over the chicken and pour the remaining salsa on top.
- Bake for 30-40 minutes until chicken is cooked through until it reaches an internal temperature of 165 degrees.
- Remove chicken from the oven and sprinkle the cheddar cheese on top. Place back in the oven for 3-5 minutes or until the cheese is melted.
- Let rest 5 minutes before serving. Serve with sour cream and green onions or any other toppings of your choice.Enjoy!
Notes
Notes:
- You can also add beans or frozen vegetables for a more balanced meal.
- Don’t overcook the chicken. An overcooked chicken will be tough and harder to eat.
- Try to use chicken breasts that are similar in size so that they cook more evenly. You can also pound them with a meat pounder (rolling pins or a wine bottle works too!) Pounding the chicken will also make it more tender.
- The cook time depends on your oven and the size of your chicken breasts so make sure you keep an eye on it.
